Yeast Biscuits

From Taste of Home

 

Wonderful from-scratch yeast biscuits-golden and crusty outside and tender inside-were a staple Mom prepared regularly when I was growing up. They are perfect for sopping up gravy from bowls of beef stew and are also great for sandwiches.

 

 

 

3-1/4 teaspoons active dry yeast

 

1/2 cup warm water (110° to 115°)

 

1/2 cup sugar

 

1/2 cup butter, softened

 

1 can (5 ounces) evaporated milk

 

2 eggs, lightly beaten

 

1-1/2 teaspoons salt

 

2 cups whole wheat flour

 

2 cups all-purpose flour

 

 

Procedure

 

DIRECTIONS

In a large mixing bowl, dissolve yeast in water. Add sugar, butter, milk, eggs, salt and whole wheat flour; beat until smooth. Add enough all-purpose flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 10 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1-1/2 hours.

Punch dough down; divide into thirds. Let rest for 5 minutes. On a floured surface, roll out each portion to 1/2-in. thickness. Cut with a 2-1/2-in. biscuit cutter. Place on lightly greased baking sheets. Cover and let rise until doubled, about 30 minutes. Bake at 375° for 10-12 minutes or until golden brown. Remove from pans and cool on wire racks. Yield: about 2-1/2 dozen.

SPICE UP ARTHRITIS RELIEF

 

Common kitchen herbs can ease your discomfort and loosen your limbs.

 

For centuries spices were used as natural remedies for a long list of

ailments. As prescription drugs became the norm, spices fell out of

the mainstream. But research confirms the spice cabinet can often be

as potent as a prescription bottle. "Spices are powerful sources of

antioxidants, anti-inflammatories , and phytochemicals, which can relieve

the pain, swelling, and discomfort of arthritis," says Laurie

Steelsmith, a naturopathic physician in Honolulu and author of Natural

Choices for Women's Health. Let's open the pantry and take a peek:

 

1. TURMERIC Culled from the curcumin plant, turmeric fights

inflammation. "It helps to stop free radicals in their tracks," says

Steelsmith. A study in the journal Arthritis & Rheumatism found

turmeric halted cartilage destruction, blocked inflammation, and reduced

swelling.

How to use: Eat dishes made with curry several times a week or

supplement with 1,000mg turmeric capsules two or three times per day,

depending on symptom severity.

 

2. GINGER Common in traditional Chinese medicines, ginger inhibits

inflammation to ease arthritis pain. Ginger is especially well-suited

for people whose arthritis worsens in cold weather since it warms

painful joints by helping increase blood flow.

How to use: Drink a cup of ginger tea daily (add one teaspoon freshly

grated ginger to hot water, let steep for 10-20 minutes, strain and

drink". Or take a ginger supplement (500 mg capsules 3 or 4 times

daily). Also try ginger essential oil (dilute three drops with a half

teaspoon almond oil and rub into affected joints).

 

3. ROSEMARY A staple in Mediterranean cuisine, this herb contains

antioxidants and phytochemicals that reduce inflammation and act as a

pain reliever.

How to use: Add six drops of rosemary essential oil to bath water, or

mix six drops with a half teaspoon almond oil and massage into sore

joints. Don't use during pregnancy.

 

4. SAFFRON This fabled herb is handpicked from crocus blossoms and is

a potent antioxidant, packing a powerful arthritis-relieving punch with

its woody scent and yellow color. It's pretty pricey-one ounce costs

about $45-because it's so labor intensive to grow and pick.

How to use: Mix half a teaspoon saffron into a glass of boiling water

and drink as a tea. Don't overdo it: More than 2 grams per day can

cause nausea. Mix several drops of saffron essential oil with a

half-teaspoon of almond oil and rub directly into joints.

 

5. CAYENNE Cayeene puts the zing in chili and other spicy

dishes. It also blocks a substance that transmits pain signals.

How to use: Nature's heating pad is best used topically since it can

cause nausea when too much is taken internally. Find a prepared

topical cayenne cream at most pharmacies and health food stores and rub

in affected areas according to package directions.

The Chinese believe the three great blessings of life are luck, prosperity and longevity. Chinese culture is rife with methods for maximizing all three of these blessings in a person's life. The process begins, however, with the framework provided by Chinese astrology. For thousands of years charts have been consulted prior to weddings, marriages, pregnancies and other important occasions. Dates were adjusted and relationships consummated or dissolved in order to insure the greatest chance of receiving the Three Blessings in fullest measure.

These techniques were once available only to the influential. Now everyone has the ability to discover their fate in terms of The Three Blessings. And, with this reading, you now have it too.

This reading is based on your Year, Month, Day and Hour of birth. From ancient times, the Chinese have believed that certain parameters of your luck and fate were set at your moment of birth. The Chinese are not strict determinists, however, and do believe people can use the information in their charts to improve their lives. Introduction

Longevity is the product of a number of factors, one of the most important being good Health. The indicators in this section address Health in general and Longevity in particular. Where applicable you will find comments on various parts of the body.

General Indicators

There are several, indicators that provide an idea of how good your Health will be in general. As was the case with Prosperity, you could consider them together as the first among equals. They do not, however, stand alone, nor do they give any particular insight concerning longevity.

Your chi (energy/life force) rating for Health is above average and, therefore, LUCKY. You should generally enjoy good health in your life as long as you take reasonably good care of yourself.

Health and your Signs

Each of the 12 animal signs has its own peculiarities when it comes to Health. A few have a slight advantage, while others have extra challenges. Most, however, are neutral, in that good Health is more a function of other factors.

Earthly Branch (Animal)

There are two, Rat characteristics that endanger Health. The first is spending too much time in your head. This can make it difficult for you to relax and adds to stress. The second is a tendency to push yourself to the limit, eventually resulting in exhaustion. This indicator is therefore UNLUCKY.

Heavenly Stem (Element)

You were born in a Metal year. A lot of Metal in a chart, which you have, indicates longevity and is, therefore, LUCKY. Since you have so much Metal, however, you could be susceptible to illnesses of the lungs, nose and, or, large intestine, as well as bouts of melancholy. Modern research has shown that happiness, especially family happiness, plays a key role in maintaining good Health and achieving Longevity.

Longevity

Your chi, that is, energy level or life force, varies among the stages of your life. Strong chi in Retirement is a good indicator of Longevity.

In your later years your chi will be weak, making this an UNLUCKY indicator.

A balanced matrix of elements is an indicator of robust Health. This means your chi (energy/life force) is relatively constant and sufficient to generally ward off illness and maintain good health throughout your life.

Chinese astrology is an ancient tradition dating back thousands of years. It predates the Western zodiac and is still consulted by millions of people worldwide on a daily basis.

Twelve signs and five elements make up the Chinese zodiac. As legend has it, on the day Buddha decided to create the signs, he called for race of 12 animals. The first animal to finish would be considered the first sign of the zodiac, and so on. The Rat, knowing he could not win on his own (as the race covered both land and water), jumped onto the back of the Ox; at the last minute, he jumped off and became the first of the 12 signs. It's of no surprise that the hedonistic Pig came in last!

Chinese astrology has 12 primary signs: Rat, Ox, Tiger, Rabbit, Dragon, Snake, Horse, Sheep, Monkey, Rooster, Dog and Pig. There are variations in the names. Some, for example, use Buffalo for Ox or Boar for Pig. Each animal has a year named after it and the astrological cycle of the Orient takes 12 years to complete.

The five elements are Wood, Fire, Earth, Metal and Water -- always being listed in that order. It is said to be a productive cycle, that is Wood produces Fire, Fire produces Earth, Earth produces Metal, Metal produces Water, and Water produces Wood, thus continuing the cycle. The balance of these elements and their positioning in a Chinese chart enable the astrologer to tell many things about a person's personality and life.

Chinese astrologers base their calculations on the Moon and its cycles, that is, on the lunar year. Western astrologers base their readings on the solar year. Thus, Western signs are called Sun signs. In Western astrology the month sign (for example, Leo) is the primary influence, while in Chinese astrology it is the year sign that holds the most influence. But Chinese astrology too has month signs. Chinese months are not named (just numbered) and use the same names as year signs. So, it can be a Wood Sheep year and a Wood Sheep month at the same time.

Western signs are usually designated by one name (for example, Aquarius) and change from month to month. Chinese signs are designated by two Chinese characters, and they change from year to year. The first character designates the year's element and the second, its animal sign (for example, Earth Tiger).

The Chinese have used decimal-based calendars as well as the 12-year based calendar. Chinese astrologers use both of these calendars simultaneously, thus resulting in the compound signs.

Chinese astrology has four signs: one each for the year, the month, the day and the hour of birth. In texts, these are often referred to as the four pillars. This may sound different to Western minds, but even here there is a similarity with Western astrology. That system, for example, uses hour signs as well, calling them ascendants, or rising signs.

Chinese astrology is complicated. The 12 animal signs combined with the five elements total 60 signs, and each person has four of these. Each of us truly is an individual, as no two people on the planet born in the same year have the same Chinese star chart.

Chinese astrologers do not believe a person's fate is sealed in stone at the moment of birth. What they do believe is that a person's time and place of birth set parameters, boundaries. What happens within these boundaries is influenced not only by free will, but also by external factors such as financial status of the family, the culture and the local economy.

There is, of course, a whole body of Chinese philosophy and culture underlying the precepts and findings of Chinese astrology. The subject of Chinese studies, as fascinating as it is, goes well beyond the scope of this basic introduction.

One point worth mentioning, though, is that balance plays a central role in Chinese thought. True strength comes from balance. A strong chart will be balanced in terms of both signs and elements. Ideally, a person will have an equal mix of strong and gentle signs, as well as of elements. And, if a person has a variety of signs in their chart (as opposed to, say, two Monkey signs and two Pig signs), so much the better. That means the person has a wider range of capabilities.

Much of the above discussion has been about personality and abilities. Originally, however, the primary purpose of Chinese astrology was fortune telling. The focus of Chinese astrology is usually on what will happen to people in various stages of their lives (or within a specific duration of time) or on what people should do on a particular day or in a certain month or year.

back to top Appendix: The Chinese Calendar

The Chinese calendar differs significantly from the Western calendar.

The primary difference is that the months of the Chinese calendar are directly tied to the phases of the moon. These phases, however, do not fit in with the length of the year as measured by the Earth's revolution around the sun.

The Western calendar is fixed in the sense that each New Year begins on solar/Western calendar date January first. Because the Chinese New Year must correlate with a moon phase, it falls as early as January 22nd and as late as February 19th on the Western calendar.

This has significant implications for Chinese Astrology. First, however, it's important to understand the primary difference between Chinese and Western astrology. Chinese astrology focuses on the year sign, and Western astrology focuses on the month sign (Aquarius, Pisces, etc.).

Chinese astrology does, however, have month signs. This can be confusing because the month signs have the same name as the year signs. Furthermore, when we say a Chinese sign corresponds to a Western sign, e.g., Ox to Capricorn, we do not mean the person was born in a Capricorn month. Rather, we mean the person's Chinese year-sign traits roughly correspond to the traits of that Western sign.

Adding to the confusion is the fact we can't know a person's Western sign simply by knowing the person's Chinese month sign. For example, a person born on the first day of the seventh month (July 1 in Western terminology) of the Chinese calendar year 1979 was actually born on August 23rd of the Western calendar. Since July 1st is Cancer and August 23 is Leo, it's easy to see the confusion.

As with the months, neither do Chinese and Western years match exactly. Thus, even though we might know a person's Chinese sign, we still cannot be sure of their year of birth. Conversely, if we know a person's year of birth, we cannot be sure of their Chinese sign.

Let's say someone was born in 1978 (Chinese year of the Horse) on the Western calendar. They would only be the Horse sign if born after February 6th; since, Chinese New Year was February 7th by the Western calendar. The Chinese Horse year 1978 actually has the Western calendar dates included in the period February 7, 1978 through January 27, 1979.

This is especially important when evaluating compatibility. Signs most compatible with the Horse (Tiger and Dog) are not nearly so compatible with the Snake, which is the sign of people born in 1978 but earlier than February 7th on the Western calendar.

10 Tips for Making Your Diet Diabetes-Fit

You probably know by now that there's no such thing as an

official "diabetes diet." In fact, there is no such thing as a food

that a person with diabetes can never eat. Even chocolate and other

sweets are possible, in moderation. But if you have diabetes, you

will need to be both prudent and food-savvy every time you open your

mouth to consume something.

 

From our "do-it-yourself" guide to a healthy life with diabetes, Know

Your Numbers, Outlive Your Diabetes (Avalon/Marlow Publishing,

January 2007), allow me to share 10 tips on eating with diabetes:

 

Know exactly what your goals are - are you focusing on lowering your

A1c (average blood sugar), lipid levels, blood pressure, or weight?

(please don't try everything at once!) Each of these requires a

different eating focus: carbohydrates for your A1c; fats for lipid

levels; salt, fruits and vegetables for blood pressure; and attention

to calories and total carbohydrate intake for controlling your weight.

 

Learn about the foods you already eat - most people eat only about 30

different foods or less on a regular basis. What is their calorie

content? Their carb content? Type and quantity of fat? Which are

protein-heavy versus carb-heavy choices?

 

Eat more of the good stuff you like - almost everyone eats a fair

amount of healthy foods already. Instead of making drastic changes,

think about modifying your diet to include more of the good parts,

while limiting the less helpful parts.

 

Practice reading food labels - practice makes perfect. The biggest

mistake people make is misunderstanding the "serving size." It's not

uncommon to find a 4-¼ ounce bag of potato chips that shows a serving

size of FIVE. Most people don't plan on sharing that bag with four

friends. If you eat the whole bag, you're likely to consume about 750

calories, including 75% of your daily recommended fat intake!

 

Hunt down the corn syrup - at the very bottom of food labels, you'll

find the ingredients listed in order by weight. If corn syrup is at

or near the top of the list (or on the list�), axe that food from

your diet. Who needs it?

 

Know your fats - lots of press lately on this. Avoid trans fats like

the plaque, and go for the "good fats" including poly- and mono-

unsaturated varieties. (Also maybe check out the newest fat

replacement product on the market, called Z-Trim)

 

Curb the carbs - just because you have diabetes doesn't mean you're

forced to eat an extreme low-carb diet, a'la Atkins. But be aware:

the more carbs you consume, the more you will struggle to control

your blood glucose. Ideally, set a cap amount of carbs you plan to

eat at each meal, and stick with it. The more consistent you are, the

better your blood sugar control.

 

"Sugar-free" is not carb-free! Never let marketing labels fool you

into believing that some carbs "don't count."

 

Cram the fiber - no matter how you slice it, lots of fiber is good

for you. Experts recommend at least 20 to 35 grams per day, or even

up to 50 grams per day if you have Type 2 diabetes and need to lose

weight. Very large amounts of fiber (approx. 50 g per day) have been

shown to improve blood glucose levels, lipids, and even insulin

levels in the body.

 

Take baby steps - don't try to go from "eating bad" to "eating good"

overnight. Instead, make gradual changes, phasing in more of the

healthy foods you like and perhaps more fiber and protein into your

diet. Keep an eye on portion size (most Americans' enemy!) Try

gradually reducing the amount of food you generally put on your plate.

Note: There's a lot of controversy over the American Diabetes

Association's food pyramid for people with diabetes, because they

recommend more breads, grains, and starches (carb-heavy foods) than

anything else. My co-author and I have to side with the patients-in-

the-know: keep your carb intake low for better control of blood sugar.

1/2 cup MIRACLE WHIP Light Dressing

1 Tbsp. sugar

1 tsp. cider vinegar

4 cups shredded green cabbage

1 cup shredded red cabbage

1/2 cup PLANTERS Salted Peanuts, chopped

4 slices OSCAR MAYER Bacon, crisply cooked, drained and crumbled

 

 

Procedure

 

MIX dressing, sugar and vinegar in large bowl.

ADD remaining ingredients; toss to coat.

 

REFRIGERATE at least 1 hour before serving.

Impossible Chocolate Cheesecake

SOURCE: Southern Living Cooking School Cookbook, Fall, 1982

 

16 oz cream cheese packages, cubed and softened

3/4 c sugar

2/3 c bisquick baking mix

2 eggs

2 oz semisweet chocolate

2 tb kahula (or other coffee flavored liqueur)

1 ts vanilla extract

1/2 ts almond extract

 

CHOCOLATE TOPPING

8 oz sour cream

1 oz semisweet chocolate square

2 tb sugar

1 tb kahula (or other coffee flavored liqueur)

1 ts vanilla extract

 

 

Procedure

 

Mix all ingredients except chocolate topping in a mixer; beat at HIGH

speed 2 minutes, scraping bowl often. Pour into a greased 9-inch pie

plate. Bake at 350^ for 25 minutes or until puffed with a dry center.

Cool 5 minutes; carefully spread chocolate topping on top of

cheesecake. Chill 3 hours before serving.

 

CHOCOLATE TOPPING: Combine first 3 ingredients in a small saucepan;

cook over low heat, stirring constantly, until chocolate melts.

Remove from heat, and stir in Kahula and vanilla; cool.

 

YIELD: One 9-inch pie

Seasoned with oregano and Parmesan cheese, these plump burgers are a delicious change-of-pace entree. I like to serve them on crusty Italian bread with warmed spaghetti sauce, but you can also use hamburger buns. -Mary Tallman, Arbor Vitae, Wisconsin

METHOD: Grill (gas or charcoal)

TIME: Prep/Total Time: 30 min.

Ingredients:

1/4 cup canned crushed tomatoes

2 tablespoons grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon dried oregano

1/4 teaspoon salt

1/4 teaspoon pepper

1 pound ground turkey

8 slices Italian bread, toasted

1/2 cup meatless spaghetti sauce, warmed

Directions:

In a large bowl, combine the first six ingredients. Crumble turkey over mixture and mix well. Shape into four 3/4-in.-thick oval-shape patties.

Coat grill rack with cooking spray before starting the grill. Grill patties, uncovered, over medium heat for 6-8 minutes on each side or until a meat thermometer reaches 165°. Place a patty on each of four slices of bread. Drizzle with spaghetti sauce; top with remaining bread. Yield: 4 servings.

1 loaf (10-1/2 ounces) angel food cake, cut into 1-inch cubes

2 packages (.3 ounce each) sugar-free strawberry gelatin

2 cups boiling water

1 package (20 ounces) frozen unsweetened whole strawberries, thawed

2 cups cold 1% milk

1 package (1 ounce) sugar-free instant vanilla pudding mix

1 carton (8 ounces) frozen reduced-fat Cool Whip® whipped topping, thawed

 

Arrange cake cubes in a single layer in a 13-in. x 9-in. x 2-in. dish. In a bowl,

dissolve gelatin in boiling water; stir in strawberries. Pour over cake and

gently press cake down. Refrigerate until set, about 1 hour. In a bowl, whisk

milk and pudding mix for 2 minutes or until slightly thickened. Spoon over

gelatin layer. Spread with whipped topping. Refrigerate until serving.

 

Yield: 20 servings.

Eggplant Cooking Hints

(1) Do not cook in an aluminum pan. Aluminum makes eggplants discolor.

 

 

(2) The skin is edible in younger eggplants. Remove the peel in older eggplants.

 

(

 

3) Cut each fruit before using, just like bananas. The flesh of the fruit will brown.

 

(

 

4) Eggplant absorbs oil very easily; coat your eggplant with breadcrumbs, cornmeal or flour first before frying.

 

 

 

(5) To help reduce the bitter flavor in older eggplants, slice the eggplant into ½ inch pieces and salt heavily. Weigh down each slice in a colander and allow for the liquid to drain out of the eggplant for 30 minutes. Rinse each slice with cold water and pat dry. This method is called "dégorgeing". It is best to use this method before frying.

 

 

 

(6) In order to bake your eggplant, slice your eggplant in half. Score across the interior of each half. Add tiny slices of garlic to go into each score. Salt each half, and bake in a 400-degree oven for 30 minutes. The eggplant is done when it is nicely browned and tender when pierced.

 

 

 

(7) When wanting to roast your eggplant, cut your eggplant into 1/2 inch slices. Toss in olive oil, salt, pepper and any of the other suggested spices below. Arrange the eggplant in a single layer in a baking dish (not aluminum). Bake at 400 degrees for 30 minutes. The eggplant is done when it is nicely browned and tender when pierced.

1 cup salsa

1 package reduced sodium taco seasoning

1 can reduced fat cream of mushroom soup

1/2 cup reduced fat sour cream

Procedure

 

Add chicken to slow cooker.

Sprinkle taco seasoning over chicken.

Pour salsa and soup over chicken.

Cook on low for 6 to 8 hours.

Remove from heat and stir in sour cream.

Serve with rice.

Homemade Apricot Ice Cream

Homemade apricot ice cream is a summertime treat.

Serve with fresh berries for an added treat.

Servings: 10

1 can (12 fluid ounces) NESTLÉ® CARNATION® Evaporated Fat Free Milk

1 envelope (7 grams) unflavored gelatin

3/4 cup granulated sugar

1 1/2 cups Tropical NESTLÉ JUICY JUICE HARVEST SURPRISE 100% Fruit & Veggie Juice

1 container (8 ounces) vanilla fat free yogurt

1 teaspoon vanilla extract

1 1/2 cups (6-ounce package) finely chopped dried apricots

 

COMBINE evaporated milk and gelatin in medium saucepan; let stand for 3 to 5 minutes or until gelatin is softened. Cook over medium-low heat, stirring until gelatin is dissolved. Add sugar; cook until sugar is dissolved.

 

WHISK together Juicy Juice, yogurt and vanilla extract in medium mixer bowl; stir in apricots and gelatin mixture. Pour into ice cream maker and prepare according to manufacturer's directions. (If not using an ice cream maker, pour mixture into a freezer-proof dish. Freeze for about 45 minutes or until partially set. Remove from freezer and stir to break up clumps. Freeze until firm.)

 

NOTE: If you use a traditional-style ice cream maker, you will need up to 6 cups of crushed ice and 4 cups of coarse salt.

 

VARIATION: Try substituting Orange Mango NESTLÉ JUICY JUICE HARVEST SURPRISE 100% Fruit & Veggie Juice and finely chopped dried mangoes.

Sheepherder' s Breakfast

 

1 pound sliced bacon, diced

1 medium onion, chopped

32 ounces frozen shredded hash brown potatoes, thawed

10 eggs

Salt and pepper to taste

2 cups (8 ounces) shredded cheddar cheese, optional

Chopped fresh parsley

 

In a large skillet, cook bacon and onion until bacon is crisp. Drain

all but 1/2 cup of the drippings. Add hash browns to skillet; mix well.

Cook over medium heat for 10 minutes, turning when browned. Make

10 "wells" evenly spaced in hash browns. Place one egg in each well.

Sprinkle with salt and pepper. Sprinkle with cheese if desired.

Cover and cook over low heat for about 10 minutes or until eggs are

set. Garnish with parsley; serve immediately.

Yield: 10 servings.
