Now you're talkin' ! I love key-lime pie! Pecan is second favorite. Baker's Square, a local restaurant franchise, serves up some mighty fine pie. Yum yum!!

Mississippi Mud Pie

This is from Maida Heatter's

Choc. Desert Cookbook:

Crust:

71/2 oz (21 cookie sandwiches) cookies such as

Oreo

1/2 stick sweet butter, melted.

Line 9 in. ovenproof glass pie plate with

foil, covering the rim. Set aside.

Break the cookies into pieces and in processor

blend until crumbs are fine ( you should have

1 3/4 cups) Mix with melted butter and and press

firmly into pan. Place in freezer for several

hours or overnight.

Filling:

2 pints coffee ice cream (or any flavor you prefer)

Soften ice cream slightly and carefully remove

foil from bottom of frozen crust.

Place crust on plate and fill

with ice cream, mounding it

higher in the center.

Return to freezer until ice cream is very firm.

Chocolate Glaze:

1 square unsweetened chocolate

2 squares semisweet chocolate

1 tablespoon pluse 1 1/2 tsp water

2 tablespons light corn syrup

1 1/2 tablespoons swet butter cut into bits

Bring water corn syrup and butter to a boil.

Add chocolate and remove from heat at once. Stir

until chocolate is melted and mix is smooth

Set aside to cool to room temp.

Pour the cool glaze over the frozen ice cream

to cover the top completely - be careful

not to let any run over the sides of the

crust. If it is necessary to spread the glaze

do it quickly before it hardens. It will be

very thin

When the glaze is frozen firm, the pie may be

wrapped airtight and frozen for a reasonable

time.

Serve as is or with sweet whipped cream flavored

with liquor and/or toasted nuts. Also good

with hot fudge sauce!

Homemade. I went on a "cooking date" last week with a friend from church. We spent the whole day just making meat pies. I think we made 6 or 8 different kinds. This was one of them.

Ok, I'll try to remember:

3 large scallions, sliced only to the light green {end first}

2 cups sliced fresh mushrooms

Pinch each Nutmeg and white pepper

5 tblspns butter

1/4 cup flour

1 1/2 cups chicken broth

2 cups each, cooked cut up chicken and cooked ham

Saute' the mushrooms and scallions in the butter in a large skillet. Sprinkle the flour and spices over it when they are cooked and stir around til mixed. Then add chicken broth, then the meat. Stir til well mixed. Put into uncooked pie crust then top with a pie crust. bake at 350 for 30 -40 min. til crust is golden.

Thanks for posting the recipe, Jeanway. It looks like something I can manage. Good meat pies are so hard to find!

AE, find the meat pies in the freezer leave alot to be desired. I usually cook what ever is SUPPOSED to be in them and have it with the pie. I consider them to be good "Crust and Gravy" sources and that's about it. :nono::nono: Like for a chicken pot pie, I'll bake some chicken and cook up some peas and carrots. Or with a beef pot pie I fry up a little steak and cook some peas too. See where I'm going with this? :nono:
